To the Ethiopian Orthodox Church and the Ethiopian Catholic Church, Lent means a period of fasting when the faithful undergo a rigorous schedule of prayers and penitence. This fast of 55 days is observed with greater rigor than any other fast and it is a test of one’s Christianity. One who fails to keep it is not considered a good Christian. The faithful should abstain from all food except bread, water and salt until sunset. Pious people may eat nothing at all during the day. All meat is forbidden, and also dairy products. On all the fasting days only one meal is allowed and this is to be taken in the evening. On Saturdays and Sundays people are allowed to eat in the morning.

Qibela is the Sunday before Lent, when people eat their full. Lent begins on the next day, Monday. During Lent many grow tired and thin.

Daily services are conducted in all the churches. Priests regularly attend night services from midnight to 7 a.m.

Vegetable Alicha

A traditional Lenten recipe from Ethiopia

 2 Tbsp. olive oil
1 medium onion, chopped fine
4 carrots, peeled and sliced
2 potatoes, peeled and diced
1 small red bell pepper, sliced
1 vegetable bouillon cube
1 tsp. powdered ginger
1 tsp. turmeric
Salt and pepper to taste
1 medium cabbage, sliced

 In a soup pot, heat the extra virgin olive oil and sauté the onion over medium low heat.

When the onions are caramelized, add the carrots, potatoes and bell pepper. Stir for 2-3 minutes. Add the vegetable bouillon, ginger, turmeric, and salt and pepper to taste.Add 1 cup water and cook for about 10 minutes adding more water to keep the vegetables moist, if needed.

After 10 minutes add the sliced cabbage and stir well. Add small quantities of water to the Alicha when it dries up. When the vegetables are tender and moist in their tasty juice (about 30 minutes), remove from the heat and serve warm.
